Tomato Mascarpone Sauce

The most recent favorite recipe- a little different, and a lot good!  Plus something to do with all those tomatoes that are coming into season.


Ingredients

1/4 lb. bacon
olive oil
1/4 cp. balsalmic vinegar
28 oz. diced tomatoes
salt/pepper
1/2 tsp. garlic powder
1/4 cup basil
8 oz. mascarpone cheese

Directions

1. Cook bacon and crumble.  Add vinegar and mix together.  Add garlic powder and tomatoes, mix and let simmer for 30 minutes.
2. Add basil and mascarpone cheese and fold everything together gently, allowing the cheese to melt. Cook on low for 10 minutes.
3. Serve over pasta or meat.  I added mushrooms in with the tomatoes for a heartier sauce.
Makes 6 servings.

  1. This looks fun to try. One question: What in the WORLD is Mascarpone cheese?...And I have to say that ya'll, as a "cheese snob" family, would know:)

  2. Mascarpone - is new to me too - is a soft, semi sweet cheese usually used in desserts like tirimasu. The consistency of cream cheese- maybe a little softer.
